Driveway Clams
INGREDIENTS
- 50 Littleneck Clams, rinsed and purged
- 4 Chorizo links, cut into 1 inch pieces
- 2 Garlic cloves, chopped
- 1 Scallion bunch, chopped
- 2 Beers
- Olive oil
- Old Bay
- 1 Parsley bunch, chopped
- 3 Lemons
- Crusty bread
PROCESS
- Fire up the stovetop and heat up a large sauce pan.
- Pour in a couple glugs of olive oil.
- Add 2 cloves of chopped garlic
- Drop in 4 links of Chorizo
- Throw in a handful of chopped scallions. Cook it.
- Add in the clams you’ve hunted (or bought here…whatever works). Stir.
- Add a couple ‘Gansetts or any beer will do (be sure to save one for yourself). Cover & Steam.
- Once the clams start to open up, sprinkle several shakes of Old Bay
- Add a few more glugs of olive oil.
- Toss in a big handful of chopped parsley.
- Squeeze in the lemon juice.
- Add salt and pepper to taste
