Farming Technique: Mookie Blues are grown in floating "Oystergro" cages. The cages can be sunk in the winter to avoid ice.
Unique Factor: Bill Mook runs a hatchery, one of the few in New England. They are in control of the entire grow-out process --- as they say, “from petri dish to dinner plate”!
Salinity: We'd give these an 8 out of 10 (a bit saltier than the Island Creeks)
Flavor Notes: A strong salty start the eases into a noticeably bready, sweet cucumber finish.

Just got on a kick of ordering fresh oysters! So many choices and my husband has become quite skilled at shucking!! East coast and west coast but so far we have enjoyed our Island Creek oysters the most. A must try for any oyster lover. Great raw, awesome oyster Rockefeller and grilled anyway you like them. My go to source for great oysters!

FRESH & DELICIOUS
I normally don't write reviews. However, everyone was so pleased at the freshness and was raving about them, that I had to post. Ordered 100 Island Creek oysters for Chinese New Year party last Sat. Placed order on Fri (lady was so helpful and friendly!) and it arrived Sat at 11'ish in time for the party. So fresh, and delicious!! Oysters were just the right size and texture / taste as described on the website was spot on! Very pleased with my first time ordering from ICO and will do so again!
