Hash Brown Waffles with Trout Roe

Serves 2

INGREDIENTS

  • cooking spray
  • 1 pound yellow potatoes, shredded
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon smoked paprika
  • 2 large eggs, lightly beaten
  • 100g tin of Trout Roe
  • Creme fraiche 
  • chives, chopped

 

PROCESS

  • Heat up your waffle iron.
  • In large bowl, combine shredded potatoes (make sure you've squeezed out the excess water to encourage a crispier waffle), garlic, oil, salt, pepper, paprika, and eggs. 
  • Once well mixed, separate into two even portions.
  • Lightly oil the waffle iron with cooking spray. 
  • Scoop one portion onto the heated waffle iron. Cook until you notice even crisp browning of the whole waffle.
  • Serve warm and topped with a schmear of crème fraîche, dollop of trout roe, and sprinkle of chopped chives.
