Hash Brown Waffles with Trout Roe
Serves 2
INGREDIENTS
- cooking spray
- 1 pound yellow potatoes, shredded
- 2 tablespoons vegetable oil
- 1 clove garlic, minced
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon smoked paprika
- 2 large eggs, lightly beaten
- 100g tin of Trout Roe
- Creme fraiche
- chives, chopped
PROCESS
- Heat up your waffle iron.

In large bowl, combine shredded potatoes (make sure you've squeezed out the excess water to encourage a crispier waffle), garlic, oil, salt, pepper, paprika, and eggs.

Once well mixed, separate into two even portions.

Lightly oil the waffle iron with cooking spray.

Scoop one portion onto the heated waffle iron. Cook until you notice even crisp browning of the whole waffle.

Serve warm and topped with a schmear of crème fraîche, dollop of trout roe, and sprinkle of chopped chives.
