Grilled Oysters with EVOO, Chilies, and Garlic
INGREDIENTS
- 24 oysters
- 1 cup + extra extra virgin olive oil (we used Graza)
- Juice and zest of 2 lemons
- 2 tbsp sugar
- 3 tbsp fish sauce
- 1 serrano chile, slivered
- 1 head of garlic, peeled and slivered
- Salt to taste
PROCESS
- Place the olive oil in a small sauce pot, on the stove over high heat.
- Once your oil is super hot, remove from the heat and stir in your garlic.
- Continue stirring until the garlic is no longer frying and golden in flavor.
- Whisk in the serrano chile and continue to stir for two minutes before whisking in the remaining ingredients.
- Once your sauce is made, shuck the oysters (check out our handy guide HERE if you don't know how) and place them on a hot grill.
- When the oyster liquor starts to bubble, place a tbsp of marinade in each one. When that marinade mix starts to bubble and the oysters are cooked, remove from the heat and serve right away with an extra topping of olive oil!

When grilling Oysters, I simply put them on the grill unshucked flat side up. Let them cook in their own juices and when they pop, take them off and enjoy
