About West Island Oysters

Harvest location: Nasketucket Bay, Fairhaven, MA

How they’re grown: Oysters are grown in floating “oyster condos”; wire mesh cages that contain multiple bags of oysters in racks within the cage. Floating encourages fast growth while supporting a solid shell and a deep cup, and they’re harvested after 18-24 months. They’re processed on-site resulting in a quick farm-to-table transition.

Why they’re unique: 
Blue Stream Shellfish is located on a 10-acre plot in Nasketucket Bay, Fairhaven, MA. The highly productive waters of the Bay are perfect for growing oysters, as well as kelp, which Dale also plans to grow. Dale says Nasketucket Bay is as near to a pristine body of water as you can find in the northeast.

Story: 
Prior to owning Blue Stream Shellfish, Dale was a professor of Marine Biology at Roger Williams University, where he taught various classes on aquaculture, including an applied shellfish farming course. Over the years, he showed the shellfishing ropes to aspiring new farmers as well as seasoned, experienced vets, many of whom have gone on to start their own operations. Outside of the classroom setting, he trained start-up farms on the ins and outs of running a shellfishing business and provided technical assistance to farms in the US and Australia. In his free time, he spends his time in RWU’s Marine and Natural Sciences Building where Rhode Island’s only hatchery lives, does research on shellfish disease and biology and conducts studies on new farming methods like using clay pellets in lieu of sand. Something tells us Dale doesn’t like to sit still…

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

"I liked the flavor a lot, but the description says “about 2. 5”, the ones I got were mostly 1. 5”, with some 2. 5”. They were on sale, so I guess you get what you pay for!"

"The oysters were delicious, but a significant number of them had some sort parasite that punched holes through the shells. Also, the heels crumbled much more than typical, which made shucking a little frustrating. Once shucked, terrific briny flavor."
