This package includes oysters from two of the most famed oyster regions in Massachusetts. We've had plenty of customers who just can't decide. And, we get it. We have the utmost respect for both towns, oysters and growers, and we're excited to be able to let you try both at your next gathering.
This package includes 50 Aunt Dottys and 50 Wellfleets.
Aunt Dotty Oysters:
Farmer: Skip Bennett
Location: Saquish, MA (on the other side of Duxbury Bay)
Size: 1.5"-2" consistent cull
Farming Technique: Despite being grown in the same body of water as the Island Creeks, these oysters are quite different. They are grown off of the bottom in various types of gear depending on where they are in their grow-out. The site itself is exposed at low tide for much longer than the ICO farm, which makes the Aunt Dotty's a bit sweeter than the Island Creeks. This is because of the well-developed adductor muscle that holds the shells together when the oyster is out of water.
Unique Factor: We have jokingly called these "Skip's Reserves". The Aunt Dotty's are grown right off the deck of the Bennett family's off-the-grid cottage. They're named Aunt Dotty Oysters after Skip's great aunt who lived in the cottage with her five children for most of the year.
Salinity: We'd give these a 6 out of 10 (a touch saltier than the Island Creeks).
Flavor Notes: Delicate, but complex flavor. Similar to the ICOs, but sweeter and more buttery. Very easy to shuck.
Farmer: Barbara and Clint Austin, Mike Devasto and a handful of other growers
Location: Wellfleet, MA
Size: A perfectly petite oyster from Wellfleet, MA
Farming Technique: Grown at the mouth of a creek running from a salt pond, these oysters are placed in bags on racks on the bottom for grow-out. The creek water gets combined with big, fast moving tides that provide a crisp and clean shot of ocean in every swig.
Unique Factor: Wellfleet is a famous oyster town; however, there are nearly a hundred small growers in Wellfleet and their oysters span the full gamut in terms of quality and taste. Wellfleets are the best at providing an esteemed, notorious and classic New England oyster experience. They are a standby on any oyster platter--like the ex that you just keep coming back to time and again. They never get old.
Salinity: Wellfleets are well known for their high salinity and their clean, simple finish.
Flavor Notes: High salt with a briny splash of crisp mineral water.
