The long grow out and cold Maine waters make for a beautifully strong shell. Clean overall, and VERY meaty. High burst of salt upfront with sugar and zinc throughout. Not overly complex, making them approachable, crisp and refreshing!

About Norumbega Oysters

Harvest location: Damariscotta River, mid-coast Maine

How they’re grown: The oysters start as seed grown in floating bags on the surface for the first year, then bottom-planted for another 1.5-3 years. No dredging on this farm, you could say they are much more “hands on” than that. Once the oysters have reached market size, they are pulled from the water by scuba diving. Yep, even in the winter. The diver carefully selects what is harvested, leaving the thinner oysters in place to continue to grow and pulled at a later date.

Why they’re unique: 
These oysters come from four different lease sites totaling 11 acres, growing at depths ranging from 5 feet at the shallowest to 28 feet. 28 feet is some seriously deep water, which would explain the need for a scuba harvest!

Story: 
The Damariscotta River is known for its oysters, and growing up in an area surrounded by rich aquaculture history, Eric knew as early as high school that a career in aquaculture was right for him. He and his wife Kellie bring with them over 20 years of expertise growing and harvesting shellfish on their family run farm. Norumbega Oyster Farm was started in 2006 and has managed to grow in size every year since!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!
