About Lowcountry Cups Oysters

Harvest location: Ashepoo-Combahee-Edisto (ACE) Basin National Reserve, South Carolina

How they’re grown: Lowcountry Oyster Co. is South Carolina’s largest floating cage farm, located in the heart of the ACE basin; a 350,000 acre estuary that is federally protected wetlands. The land surrounding the farm isn’t developed, so there’s essentially no run off.

7-9 foot tides push billions of gallons of seawater through the growing areas twice a day providing fresh water and a buffet of nutrients. After 10-14 months, the oysters are ready for harvest.


Why they’re unique: 
Today is your lucky day – you’re about to crack into one of South Carolina’s most beloved and infamous oysters! Lowcountry Oysters (or LowCo’s as they are oft referred to as) are not only delightful to eat, they’re grown by one of the sweetest and most charming farmers you’ll ever meet.

Story: 
Growing up in Mount Pleasant, SC, Trey spent his summer days fishing, crabbing, and inhaling oysters at local roasts. He was a commercial fisherman for about 13 years before a 2017 trip to the Chesapeake inspired him to try something new and pivot to oyster farming. At 30 years old he decided to leverage his house, quit his fishing job, and put it all in on oyster seed and gear.

Nearly 20 years later and he’s now the Vice President of the South Carolina Shellfish Growers Association and South Carolina’s State Representative for the East Coast Shellfish Growers Association, and about the only guy who can acceptably say that his oysters are “the best three inches you’ll ever have.”

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠
