Our Flagship oyster, grown right here in Duxbury, Massachusetts. We may be biased, but we think these oysters are pretty damn near perfect. The quintessential East Coast oyster, they’re consistent yet complex, with up-front notes of ocean brine and seaweed, and a smooth, sweet finish. Deep cups encourage plump meats for a toothy, chewy bite you can really sink your teeth into. Well balanced from beginning to end, these oysters are ideal for oyster newbies and seasoned pros alike.

About Island Creek Oysters

Harvest location: Duxbury, MA CCB45

How they’re grown: All of our oysters are raised from seed in our very own hatchery, one of only four in the North East! After 3 months being nurtured in the hatchery, and 3 months in a floating upweller system, they’re then planted directly on the bay floor where they grow “free-range” in mineral-rich mud until harvested, about 1-1.5 years.

Why they’re unique: 
Duxbury Bay has drastic eleven-foot tides, which means twice a day, the Bay drains and re-fills with cold, algae-filled water, which is ideal for hungry oysters. Since the water in Duxbury rarely exceeds 70 degrees, our oysters won’t spawn, keeping them meaty and flavorful year-round.

Story: 
Skip was born and raised in the Island Creek neighborhood of Duxbury, and spent years working on the Bay, digging mussels, razor clams, and horseshoe crabs. After an unsuccessful attempt at growing clams, he (thankfully) transitioned to oysters and never looked back. For eight years, Skip was the only person growing shellfish in Duxbury Bay, a location he would later describe as “The Napa Valley of Oyster Farming”. Cold, turbulent, salty waters ended up being the perfect environment for oysters, and by 2000, Skip was harvesting full-time.

Today, Skip and a small crew of farmers harvest year-round. Island Creeks can be found all over the country, including several Michelin starred restaurants, and they’ve even been served at state dinners at the White House!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠

Not only are the liners water repellant, they’re just as insulating as traditional styrofoam AND they can be recycled up to 5 times. Saving the planet has never been easier.⁠
