50 Aunt Dotty Oysters from Saquish Neck, MA
50 Wellfleet Oysters from Wellfleet, MA
Aunt Dotty Oysters:
Farmer: Skip Bennett | Location: Saquish Neck, MA | Size: ~2.5"
The younger cousin of Island Creeks, are one of our most treasured creations. Small, savory and sweet - these are easy oysters to open and easy oysters to love.
How they taste: Although they’re grown only a 20-minute boat ride away from the ICO’s and Row 34’s, Aunt Dottys have a vastly different flavor! Intensely salty up front with a nori, seaweed-like brine, they mellow into a rich, nutty sweetness, almost like a bitter walnut. Dotties have petite cups but are bursting with dense meats giving you a super toothsome bite.
Wellfleet Oysters:
Farmer: Barbara & Clint Austin, Mike Devasto and a handful of other growers | Location: Wellfleet, MA | Size: ~2.5"
We select oysters from seven top-notch growers in the Wellfleet shellfish community, which includes over 100 growers, to provide the classic New England oyster experience.
How they taste: Wellfleets are well renowned for their intensely briny taste (think big blast of ocean water) and clean finish. They also have a defined vegetal undertone from the bottom planting. Well-defined adductor muscles and plump, juicy meats make for a tender, chewy bite.
