About Penny's Oysters

Harvest location: Broad Cove, Yarmouth, ME

How they’re grown: These are tried and true bottom grown Maine oysters. The crop takes 3-4 years from nursery-to-harvest when they are dragged up for harvest. Their farm is located in Broad Cove, a shallow and wide cove in the middle of Casco Bay with productive clam and mussel beds. The bottom is made up of firm mud and shell hash [substrate made up of broken and crushed shells], which when paired with low density planting results in large well shaped oysters.

Why they’re unique: 
John is a Duxbury native who first learned how to shuck oysters at the Winsor House [Island Creek's hospitality flagship across the street from the farm in Duxbury]!

Story: 
In 2016, after a few years working as an ocean engineer post-college, John returned to his hometown of Duxbury where he got his feet wet in the oyster farming biz. Soon after running that farm, he moved to his now home state of Maine to manage the farm at Glidden Point. There are enough challenges to solve on an oyster farm to keep it interesting, and enough familiar skills working on the water to make it fun - John's dad is a boat builder and he grew up on the water, and has always searched for a way to be closer to it - ideally on top of it. The complexities of and the strategy behind growing a truly great oyster appealed to his engineering brain. John's wife, Beatrice, started farming in 2020 when she moved to Maine and joined John at Glidden Point before they started their own farm together later that year.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Short answer: YES!

"Most silt-filled oysters I have received from Island Creek. I guess I have become expectant of mostly pristine shells from Skip and I C’s partner farmers. 5 were DOA, and a high percentage contained so much fine black silt, that considerable care and time was needed to make them presentable. Once re re re rinsed, they actually tasted good with a sweet, crisp meat. Good size and deep cup for Rockefellering. The cleaning kept my guests waiting and I had to do it out of their view lest they remember a violin lesson they mustn’t miss. I will cancel serving the last dozen on National Oyster Day raw, instead I will bake them (after careful demudding)."

Large & Deep!

"First time trying these larger sized oysters. Flavor was good and so far all have been fresh and full of brine. Very happy with the size and deep cups. However, maybe due to the size and thickness of the shells, some were more difficult to shuck. If you are looking for a larger oyster, these are a great choice!"

Penny’s LARGE Oysters

"Totally as advertised. BIG, plump, lots of brine in super deep cups. Really excellent big oysters. If you not a “chewer” prolly not for you but I LOVE these big oysters. I order caviar or roe every time - tried them all - all have been superb. I also buy lots of tinned products - especially razor clams - and they are fantastic as well. PRO TIP for tinned razor clams: Bring some angel hair pasta to al denté. Remove the clams from the can and chop into small pieces and add to the pasta. Then pour a desired amount of the oil from the can on the whole thing and - dinner!!! So good."
