Farmer: Mike Dunbar
Location: Lewis Bay, Yarmouth, MA
How They’re Grown: There is a lot of TLC that goes into these oysters. Mike gives them a ton of room to grow, hence the round shells and deep cups these oysters consistently have. Mike puts the seed in mesh bags on racks from July to December. In the winter months, the young seed is moved to the deepest part of the farm to winter. In the spring, the oysters get divided up and put into floating cages for some serious tumbling to create dense shells and round cups. They grow until about 1 1⁄2 to 3 years old when they are large enough to harvest.
How They Taste: Clean and bright like a slap of cucumber to the face! We love the burst of salinity mixed in with the vegetal richness on the finish. Pair this with some White Burgundy and you will be living the good life.
Why They’re Unique: Other than the obvious deliciousness of the oysters and dedication Mike has to his farm, he has an Instagram handle! And we sure do love awesome pictures of oysters: @dunbaraquafarm
Size: Large (3")
Story: Mike Dunbar crafts one gorgeous oyster. He has been farming since 2004 with 3 acres of property and only 2 people working on the farm, including himself. This is a true passion project. After going to College in Rhode Island and having a commercial license so he could shellfish on the weekends, he moved back to the Cape ready to take on this business full time. After several gigs in commercial fishing and shellfishing, thoughts of his own farm crept in and he made the dream a reality! Even though he loves his oysters raw, take a note from the Pro and grill them with garlic butter. Are you hungry yet?
