Where Exactly?

How they’re grown: This crew does not need a boat to access their grant In the sandy open water of Cape Cod Bay, they can just ride out there in a truck! Trucks do not float, so these can only be harvested at low tide. Don’t worry, with a farm crew of 4-6 full-time employees they can cram a lot of oyster harvesting into a small window of time! Everything is grown off the bottom in elevated trays and tumbled periodically throughout their 3-year grow out. Oysters are removed from the farm in the winter months because of the threats of ice and freezing temperatures and over-wintered in a storage shed before being returned in the water in March.

Why they’re unique: In a town of 32 farms, this venture is on the smaller side, even by boutique standards—clocking in at a single acre bordering their namesake Crowes Pasture Conservation Area. These are a limited seasonal offering, we only wish they were available year-round!

Story: Gary has spent more than 40 years out on the water doing both recreational and some commercial shell fishing, it even helped him to pay for college once upon a time. He waited more than 8 years for his own shellfish grant and retired from his job teaching high school science to get out on the water full time. He has had his eyes on expansion ever since!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Short answer: YES!

"These oysters were an amazing addition to our NYE dinner party menu and paired wonderfully with mignonette or enjoyed by itself. Many of the reviews were spot on: strong briny flavor with a smooth finish, plenty of oyster liquor, and meats that filled up the entire shell regardless of variations in size. As mentioned by others, these were easy to shuck. We have ordered from Island Creek Oysters for a couple of years but never from this farm before.
