About Winnegance Oysters

Harvest location: New Meadows River, West Bath, ME

How they’re grown: The oysters are kept in floating cages for most of their two year grow out. Once they are almost market size, they are moved to lantern nets to finish. The area is relatively deep open water, so the oysters get a good tumbling from mother nature before being plucked from the water— yielding strong shells with nice deep cups.

Why they’re unique: 
Jordan has a biology and ecology background. He's putting it to good use not only growing oysters, but also conducting aquaculture research on his grant. Last year, he tested two experimental cage designs that use tidal power to self-clean. So cool!

Story: 
Jordan accesses his farm by boat, a 20’ Pointer named Muffin II. He has no idea where the name came from, nor what happened to Muffin I. One name he does know the origins of is Winnegance, it is the Abenaki name for the portage between the New Meadows and Kennebec Rivers---a stone’s throw from where Jordan’s lease is located.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

"The 50 oysters we ordered were absolutely perfect. We grilled them, six at the time, on the grill and as soon as they popped open we took the tops off and let them simmer in the salt water, In the cup of the oyster, until they were perfect for each individual person. I'm fixing to order more."
