Brian Fortune

Size: ~2.5"

“Open Sesame!’ You could shuck these with your eyes closed. Clam broth with light salt. Would be an absolute dream with a squeeze of lime juice to enhance its natural salt and minerality.

About Whitehaven Oysters

Harvest location: Yankee Cove, Nova Scotia, Canada

How they’re grown: Seed is collected naturally and raised in a nursery before mature seed gets transferred to one of several sites for its final grow out. The oysters will grow in rugged, rocky coves for 3-5 years, acquiring their unique flavor characteristics from the super cold, clean, North Atlantic waters.

Why they’re unique:
Whitehavens are a special cull reserved exclusively for Island Creek! They are named after a long-abandoned village and harbor used for sailor's safe haven during storms. Brian has 1250 total acres of leases across Wine Harbour and Whitehead, Nova Scotia. Due to the vastness of Canada’s eastern coastline, they’re spread across so much territory that to visit all the sites and constantly be connected to his oysters and crew, he pilots his own helicopter as transportation!

Prior to farming oysters, Brian was a pioneer in the mussel industry on PEI, having founded North America’s largest mussel growing operation back in the late 80s. And because “small scale” isn’t in his vocabulary, after selling his mussel grants, he secured a massive 1200+ acres of oyster leases and dove headfirst into oyster farming. For reference, as of 2021, Massachusetts has about 1300 acres of shellfish leases total…so traveling via helicopter makes a little more sense, eh?

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!
