Story: You might know them as the wild harvested, gnarly big boys that can grow bigger than the size of your hand. Traditionally, surf clams are only found in two settings - as the generic chopped canned clams in grocery stores, or in high end sushi restaurants where only the foot is eaten as something of a delicacy. That is, until Skip Bennett entered the chat and began spawning surf clams in our hatchery.

Why they're unique: Farming surf clams (something that essentially has never been done before) allows us to harvest them at the perfect 'littleneck' size and essentially use them in the same way: sautéed in a pan for pasta, simmered in broth for Driveway Clams , or eaten raw on the half shell. A perfect mix of a hard and soft shell - the most versatile clam out there.

How they taste: Sweet, briney, more beautifully subtle than littleneck clams but not underwhelmingly so.

We recommend enjoying by Sunday, May 7th.

"These arrived today and I opened up three right away to taste raw. Very mild clam flavor but I really liked them with a little lemon and Hot sauce. Then I steamed some up in butter, shallots, garlic, Little, Salt and Pepper, with white wine and a squeeze of lemon. They may be my new favorite clam. Don't forget to scrape of the scallops as they were big and tasty. May not be for you if you like a strong clam flavor but there was something about the texture and flavor that I really enjoyed. I will cook them up for the family with homemade linguini tomorrow night."

"Steamed dozen, great with lemon and drawn butter. Used rest in linguine with homemade garlic, fresh herbs, butter, oil, lemon zest, sauce….terrific!!"

"Since I am always interested in trying new things, I decided to support this new clam endeavor with a purchase of 100. My take: unless you like a milder-tasting clam, these won't be your thing. I didn't like them raw on half shell (too mild) but they were OK cooked. They are very small and easy to shuck but I think they are best suited to a quick saute in the shell. They sort of reminded me of a steamer clam but smaller. Flavor proffile: on the sweeter side. Probably won't buy them again."

"they gaped open pretty quick, but weren't 'bad' - we steamed them open lightly and they tasted real good, about as 'clam' as you can get before they get big and tougher. We'd recommend."

"Cooked in wine and put them on linguine with garlic, oil, herbs. Steamed the rest in beer to make some of the best NE chowder I’ve ever tasted. They were a little on the small side, though"
