They have a beautifully delicate and mild flavor. It’s a big lease, so the oysters are planted at a very low density. They also get all of the best nutrients the surrounding creeks have to offer, so they have thick shells and great meat texture. If the Moon Shoals, which are grown nearby but further out into the bay, are rock stars (with knock your socks off fruit, salt, and cream) the Spring Creeks are ballerinas — beautiful, complex, and sweet.

About Spring Creek Oysters

Harvest location: Barnstable, MA

How they’re grown: Like many Barnstable oysters, the Spring Creeks are grown above the sand in rack and bags (their nursery) and are moved to trays (final grow out). They are tumbled at various points in the process to promote their nice deep cup and round shape.

Why they’re unique:
Barnstable Harbor’s drastic tides (14 feet) are a contributing factor to the flavor imparted onto these wonderful bivalves. The tides bring in salty ocean water and pull nutrient rich water from the marsh.

Story:
Coming from a family of farmers and shellfisherman, Paul has been on the water working with oysters and clams his entire life! Paul graduated from Massachusetts Maritime Academy in 2010 and started his farm in Barnstable soon thereafter, following in the footsteps of his parents. Paul has been steadily growing his operation since then, as he looks to expand into new acreage as family members retire.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.

Not only are the liners water repellant, they’re just as insulating as traditional styrofoam AND they can be recycled up to 5 times. Saving the planet has never been easier.

Deliciously perfect

"I’m so happy I ordered these oysters. I’m terrible describing the flavor but these oysters had a smooth sweet ending flavor. They arrived on Saturday here in SC, we didn’t start cracking until Sunday and finished them off on Monday. Every single oyster was fresh! I will definitely order again! Thank you so much."

Nice Salinity

"These Spring Creek Oysters were just as described. Easy to open, slightly sweet but with a nice minerality and salinity flavor profile. Very enjoyable on their own as well as with a Sherry Mignonette. The salinity was great with a homemade cocktail sauce!"

Trey S. (5/5)

Great product and service

"Couldn’t have been happier with our experience with Spring Creek Oysters! Considering we are on the other side of the country the oysters we FRESH and ice packs still completely frozen, not a single dead soldier out of the 100. The quality and taste of the oysters was on point and also the shells were very clean which mean only a quick rinse was needed before chucking. We will be ordering again for sure!"

Jim S. (5/5)

"Out of a batch of 50, only one was bad. Generally they are all good. I shucked while my wife killed it. I think she had 48 and I had 1."
