About Spindrift Oysters

Harvest location: Westport, MA

How they’re grown: These oysters are grown on 3 acres at the mouth of the Westport River. The seed is placed in trays on the river’s shore. These trays are exposed 25-50% of the day due to the tide depending on location. Bags are moved around to keep the oysters’ exposure consistent from bag to bag. When around .5” in size, the oysters are moved to bottom cages on the ocean floor. They take around 24 months to grow to market size.

Why they’re unique:
These cages are constantly handled. Because they are grown at the mouth of the Westport River, the equipment needs to be maintained all the time. They are also able to harvest all year long because he can move the oysters to deep waters to protect them during winter storms and ice. What a guy!

Story:
Toph is a family man. He got into the oyster business after spending 10 years as a Civil Engineer and 5 years as a stay at home Dad. He fell in love with oyster farming because it allows him to have a flexible schedule to spend time with his children and to be outdoors. He loves the water so much that he named the oysters after the nautical term ‘Spindrift,’ referring to the mist sprayed from a crashing wave. We think these oysters taste like a slap of fresh, salty air, too!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.

Not only are the liners water repellant, they’re just as insulating as traditional styrofoam AND they can be recycled up to 5 times. Saving the planet has never been easier.

Reviews

Smallish

"Longtime customer who won't be ordering these again. The first bag of 50 contained maybe 15 oysters no more than an inch to an inch-1/2 long. I don't mind small oysters, but they were tiny and needed to be in the water another season. Tasty, fresh but lilliputian."

YUM!

"Deliciously briny!"

So delicious

"So many reviews were disappointed with how small these babies are but man they pack a lot of flavor. And they were surprisingly easy to shuck. I will order these again and again. Perfect for newbies and seasoned oyster lovers. We made oyster shooters with some of ours and they were the perfect size for that!"

Claude L. (5/5)

Great tasty and accessible oysters

"Great tasty and accessible oysters but unfortunately a few cracked/exposed and threw out. I will continue to order oysters from you"

Spindrift

"They're tasty. They taste just as described. However, these are really small oysters. The meats were all around the size of a stack of two nickels. This is the third time I have ordered from ICO, and they have delivered beautifully fresh oysters very fast each time. The size of the Sprindrifts is disappointing but it won't keep me from ordering from ICO again."

Louis G. (3/5)

"These are very small oysters. Not remarkable for salt or sweetness. Very easy to shuck."

The Best

"No matter where you eat oysters in America, you will not have any better no matter if it's the west coast or east coast than Island Creek!"
