How They’re Grown: These are different from the Moon Shoals because they are grown in the deepest part of his grant and therefore spend less time out of water. They sit in racks and bags because Barnstable Harbor is too sandy to plant on the ocean floor. They are protected in the ocean and really do well without much attention at all!

How They Taste: They are like Moon Shoals with nice, deep cups and flavors of butter, brine and eel grass.

Why They’re Unique: These are the cousins to Moon Shoals oysters. We think their name reflects how hardy and self-sufficient they are!

Size: Petites

Story: Jon has been harvesting oysters in the mouth of Barnstable Harbor for over 10 years! He received his first grant in 2008 and has been hooked ever since. A native Cape Codder and full-time firefighter with the Hyannis fire department, Martin has always wanted to make a living by the sea. His lease sits on about two acres south of Sandy Neck Beach, which acts as a barrier to the sandy bottom flats where his oysters are grown.
