Razor clams are at their best right out of the water. Plan to enjoy within 1–2 days for peak flavor and texture. Keep your razor clams cold, covered with a damp towel, banded until you’re ready to cook, and never submerged or in an air tight container. Give them a quick rinse, then prepare as desired. If you need more time, they can be frozen while still alive. As with all live shellfish, discard any that remain open when tapped.

Approximately 6 - 8 Razor Clams per Pound. A quick note on weight: Because these are live shellfish, the razor clams may release some natural moisture in transit. We always pack to the full stated weight at shipment, though minor variation on arrival is normal.

Razor Clams! Where do we begin? We have been harvesting, selling and eating razor clams for as long as we have been growing oysters. They have a huge following among chefs but we rarely offer them here because they are hard to pin down - if there's a strong wind or a whiff of rain these tricksters won't come up. We also have various seasons where oyster farmers are too busy to harvest, and they hold most of the leases.

Howeverrrrrr, guys we have them. We don't have that many and are expecting to sell out, but if we do then we know folks are interested and we can bring them back again. Our dream is for this to happen once a month when nature gives us the green light.

A little more about razor clams, they are native to our Bay and serve as a secondary income for many oyster farmers. They can only be harvested on the new and full moons, when the tide is at its lowest. They cant be harvested in the dark, in rain, when the pressure is low, or any other stage in the moon cycle. Their challenge is their reward though, because a literal 30-seconds-a-side on the grill and you have some of the most tender, easy and delicious clams.

"Well packed and all were alive at the time of delivery. Great tasting. I would have appreciated a more thorough explanation of cleaning these as the Island creek substack article wasn't illustrated so it took a bit of research to find exactly how to approach cleaning. I found a video describing a Chinese preparation which used a scissors to cut through the razor clams and clean them in the sink. Nonetheless a great product and grateful to have access to them."

First Time

"First time trying razor clams and we loved them. Sauteed for only a few minutes in some olive oil, butter, garlic, and white wine. Pulled them out, sliced them up and tossed some toasted bread crumbs on them. Even our youngest daughter couldn't get enough of them."
