These are a full-on Cape oyster experience! Meaty and full throughout, they have a firm texture and a good bite with a huge blast of salty water from beginning to end. Unlike most of our oysters, these aren’t cushioned by sweet flavors–after the brine, they’ve got a strong vegetal seaweed flavor that definitely isn’t shy. The farmers like to eat ‘em raw but think they go particularly well with a couple of PBR’s.

Harvest location: Onset, MA

How they’re grown: Seed is raised in upwellers and moved to floating bags before being planted on the bottom of the bay floor for their grow-out, which is about 18-24 months. Product is spread over 23 acres at the edge of the canal on Fisherman’s Cove, which gives the oysters access to a huge influx of water and massive amounts of algae to eat.

Why they’re unique: 
Small and deep cupped, Peter’s have rounded shells with an unmistakable dark green tint. All of the oysters are harvested by hand so there’s very little chippage, giving the shells a nice, long shelf life.

Story: 
Onset Oyster Corporation was founded in 2004 by Bob who was previously a wild commercial quahogger and Dennis, who had been farming shellfish for decades. In fact, they were the first non-Island Creek oysters we ever sold! Once, Dennis broke his leg while harvesting and we were his first call…even before the ambulance.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠
