About Paines Creek Oysters

Harvest location: Brewster, MA

How they’re grown: Huge 14-foot tides flood the Brewster flats daily, making it the ideal place to grow oysters. Soft sand and a strong current dictate that the oysters must be kept off the bottom, Joey uses trays to house his crop for their entire 2-3 year grow out. During the winter months, the crop is removed from the water and stored, except for a select few---those are for family and friends to snack on in the off-season.

Why they’re unique: 
This farm is serious about freshness. The harvest is always done at a mid-tide, making sure the oysters remain in the water until the very last second! Once out of the water, barnacles are removed by scrubbing the oysters by hand.

Story: 
Besides his job out on the water, Joey also owns a pizza parlor named, wait for it---Joey’s Pizza. He thinks that they might be the only pizza place in the country that also owns an oyster farm. Sounds like a match made in heaven if we’ve ever heard of one! His father Paul helps farm the oysters while Joey is back at the shop throwing pies.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Lovely little extra briny oysters

"This is our first time trying Paines Creek and we are very happy with them. I love that they're cleaned pretty well before shipping. They are smaller but they're perfect for just the 2 of us taking a few days to eat them. They're high salt so get your mignonette ready to balance it out. Paines Creek FTW!!!

"Exceptional in every way. These are one of my favorite east coast oysters. Exceptional in taste and brininess. They are perfectly sized and the liquor is sublime. Another amazing quality is how clean are on the outside. I had these in Boston and shipped them to my house a few months after and there was absolutely ZERO difference in quality and freshness. If Malpeques are the “cognac” of oysters then Paines Creek are “Armagnac”. It’s not refined and in the best way possible. High salt, vegetal, earthy and in-your-face flavor makes this (IMHO) an oyster-lovers oyster. It’s f’n perfect—who needs Malpeques?!"
