About Joly Oysters

Harvest location: Dennis, MA

How they’re grown: These oysters are first put in rack and bags and then moved to trays. They mix up a bit of the growing out equipment and keep them completely off the ocean’s floor. They take around 18 months to 2.5 years to get to market size.

Why they’re unique: 
This is a petite operation. They operate on 1 acre and are making the most of it. They waited 10 years for a shellfish grant and are working hard to bring you these flavor bombs. And yes, they named their oysters after all the hard work they do!

Story: 
Dennis can be a taxing area to grow oysters. The oceanfront debuts all of the possible challenges in regards to weather: nor’easters, ice, ripping winds, and super high tides. It seems like Mother Nature is trying to protect these delicious gems, but have no fear! The Joly family is here!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠

"Was pleasantly surprised with Joly oysters. Good size, very easy to shuck. If you like your oysters with a good bit of salinity, these are for you. I always eat the first one with no condiments, it was as if I had plucked them right out of the Atlantic waters. We had them raw, grilled with garlic butter and Rockefeller style with spinach. My guests, who have experienced quite a few of my ‘oysterrama’ events told me they were their favorite, so far. Well done, cheers!"
