Farmer:
Jordan Viera

Size: ~2" - 2.5"

Like most Rhodie oysters, these pack a punch of salt that is highlighted with a beautiful minerality. Great meats provide a toothy texture, that once bit into, pops with subtle vegetal sweetness. These are certainly bangers!

About Breakwater Oysters

Harvest location: Sakonnet River, Portsmouth, RI

How they’re grown: The 2-acre farm is located in the Sakonnet River and protected by numerous breakwaters, including a “rip-rap” style stone breakwater sheltering the nearby road. Seed is started in a rack and mesh bag system where it grows to about 2 inches in size. They’re moved to trays that are planted on the river bottom for their final grow-out, which can take 1-3 years.

Why they’re unique:
The shallow and protected waters of Island Park Cove produce ideal growing conditions for shellfish. During warmer months, the cove flourishes with food and nutrients, and oysters in the shallowest parts of the farm will show their gratitude by growing at a rapid rate. The muddy bottom that the cages sit on and the high density of algae in the shallow waters not only give the oysters an earthy and vegetal taste, but they can take on an earthy green appearance as well!

Story:
Jordan was approved for his lease in February 2021, and while he may be the new kid on his own farm, he’s no stranger to the oyster biz. For the last several years, he’s been managing a neighboring farm that produces one of our favorite oysters, Riptides from Westport, MA. With the tutelage of oyster vet, Kerian Fennelly, Jordan has an arsenal of farming techniques to produce a fantastic oyster.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.
