About Belon Oysters

Harvest location: The bays and coves of Harpswell, Maine

How they’re grown: Belons require some extra attention because they’re much more delicate than other oysters. They grow wild and are hand-dragged by local fishermen, and each one needs to be banded shut by hand, like a lobster claw, to keep the shells closed and liquor from leaking out.

Why they’re unique: 
Belons (Ostrea Edulis) are a different species than our homegrown Island Creek variants (Crassostrea virginica) and are the only non-Virginica oyster grown on the Eastern Seaboard.

Story: 
Originally known as European Flats, Belons (named after the river in France that grows them), were introduced to the Harpswell region during a University of Maine experiment in the 1950s. The farming experiment was ultimately abandoned because the scientists saw no immediate results, but a few decades later the Belons had reproduced and were thriving in the wild in places like the Damariscotta River and Casco Bay. The native Belons that exist in Maine today have genetically evolved to survive in frigid waters and grow wherever they please but usually prefer shallow, rocky bays.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

1st Time Belon Experience Is Like Skydiving (maybe, I've never donw that.)

"I was reticent to finally lose my Belon virginity given the notorious reputation and cautionary food journalism (the Sean Penn of oysters? Really?). I saw the recent offer and decided NOW was the time. Thankfully I know my way around an oyster knife or two ... these are not hinges to take lightly--it is wise to have a variety of shucking knives handy. But M.F.K. Fisher was right! I found the taste completely delicious. Quite firm and meaty, nearly a clam-like texture, a subtle sweetness beneath the bodacious flexing. The ocean's lense. Raw and unadorned is the only way to enjoy these jewels. These are for true oyster lovers. I am now cursed with a craving for this rarest of oyster, forever. Great job Island Creek team: excellent contact, ordering ease and shipping efficiency and fresh product quality. I now unfairly judge all other oysters by the 40 Belons I absorbed (while sharing just a slight 10.) I recommend good quality chilled sake to compliment the task."

Great oysters! And, great big!

"These were very tasty. Having said that they might not be for everyone since they have a very metallic initial flavor. And, these wild oysters can be very tough to shuck since the hinge ligament is extremely strong. I had to use 4 different knives over the course of 50 oysters since some were really tough and big and some more delicate. The meat can be as big as a Pacific oyster. My girlfriend likes Kumamotos and these are at the other end of the spectrum. I’ll certainly buy them again when they’re available. Oh, the rubber bands really helped to keep them fresh - I think I only pitched a couple. Sorry I didn’t video the shucking process."

"Imposible to shuck (w/o serious microwave heating). At least half appeared dead or old. Single worst experience I/we have had with ISC delivery. A former fan (check my order record), the remaining half of this order is going to Vermon'ts bears; I won't be back. Bill Macan"

"I love oysters raw, but the Belon oysters are massive. I grilled them and they were good. Like eating a steak. The shells are beautiful, and i will save them for grilling scallops. Not easy to open, but did not crack or splinter. If you prefer grilled oysters then try them. Larry"
