About Northern Belle Oysters

Harvest location: North Lake, Prince Edward Island, CAN

How they’re grown: These oysters are grown in floating cages on Phil’s 30-acre lease for the majority of their lives. North Lake has rough waters with tons of wind and wave action which naturally tumbles the oysters and helps them form strong shells with deep cups. Because the waters on this part of the island are especially cold, the oysters can take 4-5 years to reach market size.

Why they’re unique: 
These are some of the first oysters to come out of North Lake. North Lake is well-known as the bluefin tuna capital of the world, has over 90 lobster fisheries, and some of PEI’s most productive areas for snow crab, herring, mackerel, and halibut. After being used primarily for mussel farming, Phil and his crew of 3 worked to convert all the gear on his lease to oyster gear and his oysters are thriving!

Story: 
Northern Belles are the third oyster to come from East Cape Oyster Company. In 2016, Phil had the honor of taking over the leases of oyster veteran Tommy Joe MacDonald, who started farming in the waters of eastern PEI in 1975. Tommy knows the leases like the back of his hand and is quick to step in as needed with growing tips and hilarious stories from ‘back in the day’. Northern Belles’ logo is a nod to the picture-perfect lobster and tuna fishing shacks that line the harbor on the other side of North Lake.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠

Lovely little oysters

"Shells are relatively clean and quite easy to shuck without breaking. The overall size is right at that 2. 5" Very salty up front, really lovely flavors at the end, umami & sea water, a lovely combination. I wouldn't call them plump, but this makes for a very approachable oyster for the unaccustomed oyster eater. These are dainty, elegant, and delicious. If you're after a plump, substantial oyster, these might not be the best bet."

One of my favorite oysters so far

"These were perfect oysters, some of my favorites I've gotten from Island Creek so far. They were a little bring up front and then had a sweet finish. They were a little tougher to shuck than other oysters but flavor made it worth it. We got them shipped on Wed and by Monday they were still perfectly fresh."

Oysters for the 4th!

"I was suspect of ordering oysters for delivery but I'm a big fan of Island Creek and figured that they would do it right. The oysters arrived on time, as advertised, and were delicious, all 50 of them. Not a bad one in the batch. Nice and briny and surprising minerally finish for a mid-summer oyster (there's no "r" in July!) I won't hesitate to order again."
