They are so unique that they taste like they are from a different country! Wait a minute... think caramelized onions, nori, and spring garlic. The meats are super plump and have a clam-like chew. The brackish waters from the Souris River gives his oysters a distinctively different profile than many other PEI oysters.

About East Cape Oysters

Harvest location: Souris, East Cape, Prince Edward Island, CAN

How they’re grown: Phil purchases seed and collects wild seed that he puts into floating upwellers before placing them into his cage system. He tumbles the oysters twice a year, creating firm shells with deep cups. These Canadian gems take 3-4 years to get to market size. Phil is one of two growers in the Souris River of Prince Edward Island.

Why they’re unique: 
We're huge fans of the guys at East Cape and the incredible product that they grow but when we learned what it takes to grow oysters in Canada in the winter, our respect went through the roof [read: it ain't easy). During the cold months, the Souris River turns into a frozen tundra with ice so thick you need a chainsaw to cut through it. In the fall, the oysters are sunk deep enough to avoid the freeze, and when they're ready to be harvested, Phil and his crew drive to the lease via snowmobile, chainsaw through to the water, and haul the oysters back to the shore. Fun fact: back in the day driving over the frozen rivers was the *preferred* method of transportation because the wind would keep the surface clear...and it was a pretty good shortcut.

Story: 
Phil started this oyster farm in 2016 as an irresistible side hustle. Growing up on PEI, he fell in love with the ocean and boating and couldn’t let the opportunity to grow oysters pass him by. His main source of business is exporting onions and potatoes he grows on PEI. Amongst us ICO oyster people, we call these the ‘Potato Truck’ oyster for obvious reasons

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠

Great taste, medium meat, hard to open

"4 stars. Fantastic tasting. Firm medium sized meat. Really hard to shuck. Have to use the Yankee Shucker with an oyster knife, plus a wrap with a wooden meat tenderizer. Shells are super clean, which is important to me, I don't want k spend a lot of time scrubbing my oysters."

"These oysters were amazing!!! I initalll thought they were on the small side but after I shucked a couple they were full to the brim with meat and the flavor was over the top. Nice brine up front followed by a sweet finish. Also they shucked easily. I was to busy eating them to stop and take pictures. Best thanksgiving app EVER!!!"
