Farmer: Skip Bennett (Founder of Island Creek Oysters) and a small group of Duxbury growers

Size: ~2.5" - 3"

Our Flagship oyster, grown right here in Duxbury, Massachusetts. We may be biased, but we think these oysters are pretty damn near perfect. The quintessential East Coast oyster, they’re consistent yet complex, with up-front notes of ocean brine and seaweed, and a smooth, sweet finish. Deep cups encourage plump meats for a toothy, chewy bite you can really sink your teeth into. Well balanced from beginning to end, these oysters are ideal for oyster newbies and seasoned pros alike.

About Island Creek Oysters

Harvest location: Duxbury, MA CCB45

Where Exactly?

How they’re grown: All of our oysters are raised from seed in our very own hatchery, one of only four in the North East! After 3 months being nurtured in the hatchery, and 3 months in a floating upweller system, they’re then planted directly on the bay floor where they grow “free-range” in mineral-rich mud until harvested, about 1-1.5 years.

Why they’re unique: Duxbury Bay has drastic eleven-foot tides, which means twice a day, the Bay drains and re-fills with cold, algae-filled water, which is ideal for hungry oysters. Since the water in Duxbury rarely exceeds 70 degrees, our oysters won’t spawn, keeping them meaty and flavorful year-round.

Story: Skip was born and raised in the Island Creek neighborhood of Duxbury, and spent years working on the Bay, digging mussels, razor clams, and horseshoe crabs. After an unsuccessful attempt at growing clams, he (thankfully) transitioned to oysters and never looked back. For eight years, Skip was the only person growing shellfish in Duxbury Bay, a location he would later describe as “The Napa Valley of Oyster Farming”. Cold, turbulent, salty waters ended up being the perfect environment for oysters, and by 2000, Skip was harvesting full-time.

Today, Skip and a small crew of farmers harvest year-round. Island Creeks can be found all over the country, including several Michelin starred restaurants, and they’ve even been served at state dinners at the White House!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.

Not only are the liners water repellant, they’re just as insulating as traditional styrofoam AND they can be recycled up to 5 times. Saving the planet has never been easier.

Reviews

Great company, amazing oysters!

"We ordered the oysters to celebrate a milestone anniversary. They arrived as promised and were amazing! I was also surprised to find the partnership mignonette seasoning between Island Creek Oysters and Spicewalla was available at a local chef center (and is also available on the Island Creek website). The seasoning was a perfect compliment! As a sidenote: we ordered from Island Creek once before and shipping was delayed a few days. The company stood behind their product and gave us a refund, which gave us confidence in ordering again. Thank you!"

Not usual quality

"I’ve been ordering from Island Creek since 2019. The product is usually very high quality. The shipment of ICOS oysters that I had last weekend was subpar. Most of the oysters did not have liquor. Several had a substantial off flavor. We did not finish the 50 oysters that we had ordered."

Review request for your recent order – Order feedback & is

"Hello Island Creek Team, Thank you for reaching out for feedback. I’ve ordered from you several times before and have always been impressed—including with this week’s order, which shipped on Wednesday and arrived promptly on Thursday with incredible service. They were packaged tight and were still very cool. Unfortunately, I was quite disappointed with the quality of the oysters in this particular batch. When opened, they had very little liquor/juice, and about 5 of them (10%) had already opened in transit and had to be discarded. Given how much I usually enjoy your oysters, this batch fell well short of the usual standard. Thank you for listening, and I look forward to my next order. Best regards, Grover Allgood"

Excellent oysters, not one bad one in the bunch.

"Had never tried these and was very pleasantly surprised with their briny taste. Ate the whole sac with just a squeeze of lemon on each one. I did expect them to be a bit larger though and some were. I like large oysters and ordered these to try because Belon's are out of season and not available. We actually chew our oysters and appreciate a nice mouthful. I believe these will be my go to for occasional orders or some similar."

— Patrick S. (5/5)

order these oysters alot, would not order again

"I know these were larger ones, and they went well, however we had to throw 8 or so away due to rotten/crumbled and yellow umbo sections. Unsure if it was due to the larger batch (usually order small) but the shells weren't as great as usual."

— Timothy H. (2/5)

Outstanding

"We’ve ordered several times for special occasions and have never been disappointed by the freshness. The quality of these oysters is only rivaled by the quality of the buying experience. As advertised: fresh, delicious, and on time. What more could you ask for?"

— Jeremy M. (5/5)

These were indeed large oysters!

"These were indeed large oysters! I found them a bit more difficult to open than regular ICOs. I needed a longer oyster knife. But they were briny and very tasty. We grilled about half of them with your suggestion of butter and tabasco. They were fabulous! We will probably go back to regular oysters for our next order but this was a new and fun oyster experience."

— Paul B. (5/5)

Island Creek Oysters never disappoint

"We tend to order the Island Creek Oysters every time we get them shipped to us in California. They are always good. Love having a little bit of the East Coast over here in the West. I will always choose an East Coast oyster over a West Coast oyster"

— Gloria V. (5/5)

I already submitted a review

"I already submitted a review but anyway, the oysters arrived on time and with good packaging that kept them real cold. The oysters were delicious. Can't wait to try your other varietys. Thanks for the great service."
