About Sand Dune Oysters

Harvest location: Souris, East Cape, Prince Edward Island, CAN

How they’re grown: Phil harvests wild seed from the area and let’s these babies grow to perfection on the famous red sand dunes around the Souris river. They are all bottom cultivated. The oysters are moved seasonally to protect them from the winter ice. They are harvested a low tide by hand as much as possible. These oysters are some of the most mature that we carry! They take around 4 to 6 years to reach market size.

Why they’re unique: The Sand Dune name was first coined by the previous lease owner Tommy MacDonald who is still involved in the company today. Since the 1980s, these oysters have graced raw bars and are well known for their intense flavor and beautiful shuck! As to be expected, there are sand dunes that run all along this corner of PEI, hence the appropriate name!

Story: Phil started this oyster farm in 2016 as an irresistible side hustle. He gained access to the Sand Dune lease and also started to grow his own East Capes which are the newer of the two oyster projects. Growing up on PEI, Phil fell in love with ocean and boating and couldn’t let the opportunity to grow oysters pass him by. His main source of business is exporting his own farmed onions and potatoes he grows on PEI. Sand Dunes have been in Canada for over 30 years and came to the U.S. for the first time in 2017. We are pretty grateful to have access to this Canadian treat.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

"I received these on the day expected. Opened box . Was hit with a rotten smell. Was not happy. But my friend visiting encouraged me to shuck them . Ordered 50 and 11 were rotten stinky horrible. Emailed ICO. They didn't blink. Gave me a refund . A fair refund. But when I ate the good ones . Oh my. Best oysters ever."

PEI oysters -Sand Dunes

"I was looking forward to my first experience with PEI oysters. I was thrilled to see the heavy green shells . I was a bit dissappear in the size of them however. I notice a trend that the farmed oysters are getting smaller every year . They were very clean . Some of the cleanest and freshest oysters I have gotten from ICO . I made my thru the first 18 of them and I realized that 5 of them were dead and smelling awful. So now on my first day of receiving them I have a high percentage of bad ones . These are the biggest number of bad ones I have ever had in an order from ICO ever. I'm going to knock out the rest of them today to see what the total number actually is. They have a nice clean crisp flavor - cups are not deep so there is not a big bite with these . On the small size - several were under an 1 1/4 " wide . I can saw I had them and will not be ordering any more. They are definitely worth trying if you have never had PIE oysters before . Perhaps yours will be fresher than mine."
