About Riptide Oysters

How they’re grown: Kerian and his crew have a mean oyster game! Riptides are one of two types they grow. These oysters are placed in floating bags designed after Australian “Flip Farms.” Believe it or not, Kerian ordered this special gear from Australia and took it to the next level by designing his own version. He took the bags, tethered them together on one central line, and pulls them across a hydraulic operated ramp. Kerian certainly embodies the phrase work smarter not harder...don’t be fooled, it’s still very hard work! The Riptides take just over a year to get to market size and are tumbled aggressively during that process, resulting in deep cups and firm shells.

Why they’re unique: 
Riptides are grown deep in the East Branch of the Westport River, right behind Horseneck Beach. The area surrounding the farm is pristine, conservation land.

Story: 
Kerian and his wife, Kristin, started the farm in 2009 and were the first in Westport to receive an aquaculture grant. Talk about making history! Kerian has always been obsessed with the ocean. He received a degree in aquaculture and was lobstering before diving into the oyster world. Their first endeavor was the Beach Plum farm, which is an incredible ocean operation located directly at the mouth of Buzzard’s Bay. The Riptide project started several years later – oddly a stone’s throw away from the Beach Plum farm. Kerian and Kristin also opened up a raw bar, called Westport Sea Farms, located where they bring in their oysters. They have 3 daughters and 4 boats – so as you can probably guess – one is named for each daughter and the big ocean boat is named the ‘Kristin Marie.’ Kerian is innovative, full of energy and just an all-around nice dude.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

"I ordered 100 Riptides on Monday that were delivered by Fedex yesterday (Thursday)!!! If I was already impressed by the service, I was more than pleasantly surprised by the packaging, the freshness, and the quality of the oysters! The packaging consisted of the cardboard box with inside a plastic bag that contained thick layers of a recyclable beige styrofoam to protect and maintain the oysters bag temperature. The four ice packs plsced on the bottom of the box and top of the oysters were still hard as hell. Contrarily with my past experiences when ordering oysters, these ones are clean and there is no odor of mud! Special bravo too for the caliber/size of the oysters which is pretty consistent (equivalent to number 3 in France). The quality is fantastic! We had a few yesterday for lunch and for aperitif in the evening: absolutely delicious with a dry white wine! Moreover, these osters are easy to open. A brochure with instructions about how to proceed and how/ how long to conserve them is included in the parcel. The Riptides are saltier than many others that I had here in the US or Canada. If French people are reading this review, saltier does not mean they are as salty as a Marenne Oleron or Arcachon, but remember that “When in Rome, eat as the Romans eat”;-) The riptides Farm Crassostrea Virginica are actually delicious and so fresh!!! Served with simple halves of lemon or a shallot/ bloody Mary or Asiatic style mignonette they are to die for! According to the site, the oysters come Westport, MA(USA), they are farmed from 18 to 24 months, AND the good news is that they are available all year round! Maximum respect for the passionate ostreicultors who work all day long and 365 day in very hard conditions: the fruit of your labor is so delicious that I definitively order again! Thank you!"
