About Aphrodite Oysters

Harvest location: South Thomaston, Maine

How they’re grown: Aphrodite oysters are grown in bags or cages that float on top the water, where there is the highest concentration of food so they have plenty to eat. If you've ever gone swimming in Maine during the summer you know it is COLD! The colder the water the slower the oyster growth and that is why these beautiful oysters can take up to 3 years to reach market size [the patience pays off!]. They are also beginning to bottom plant some product to maximize their lease, so be on the look out in the next few years for a special oyster from this farm. More grow out methods = more amazing Maine oysters!

Why they’re unique: 
The Gulf of Maine is an epicenter of summer migration routes for whales, tuna, and others looking to gorge themselves on the ecosystem fueled by these nutrient rich waters. Hey, if it's good enough for a 1,0001b. tuna, then its good enough for her oysters!

Story: 
Krista started growing Aphrodite oysters in 2017, after learning about (and subsequently falling in love with] aquaculture. She decided to name her farm and oysters "Aphrodite" out of the love and appreciation she has for Maine's beautiful ocean, coasts, and islands. As a native Mainer, the beauty that Maine's Coasts offers is something that continually inspires her and she wants to think of Maine when they eat her oysters. When Krista is not busy growing delicious Maine oysters, she also captains a lobster boat!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠
