Peter says the Farewells have the traditional sweet minerality of a bottom-cultured oyster but with a great salt drive like that of a surface-grown oyster. He likes to eat his oysters in his backyard after a day of farming with a little bit of fresh horseradish.

How they’re grown: These oysters are grown using a method called suspended culture, where they hang in bags beneath the surface of the water. This allows them to feed 24 hours a day, creating plump meats that fill out the shells beautifully.

Why they’re unique: 
The Damariscotta River is renowned for its oyster cultivation and has built a reputation for first-class oysters! Technically an estuary, the river has significant tidal flows where freshwater and saltwater mix. The temperature of the river is slightly warmer than that of the ocean, so twice a day the oysters get a chilly flush of saltwater which creates the balanced sweet/salty flavors Damariscotta oysters are known for. The name "Farewell Buff" is a nod to the light yellow ochre color that the shells take on.

Story: 
Peter has been in the oyster world for over 20 years! He used to harvest wild oysters but has since moved into the world of aquaculture, and is one half of a two person crew that harvests Farewells. We love the oysters that come from this region so much, we've got our fingers crossed he's got another 20 years in him!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!
