Why They’re Unique: Two oysters grown on the same farm by the same farmer...Similar to ICOs and Aunt Dotties! The brackish waters of the Souris River gives his oysters a distinctively different profile than many other PEI oysters.
Sand Dunes have graced raw bars since the 1980's with their signature bright green shells and plump meat that hits you with a classic briny pop, followed by a rich ghee-like finish.
East Capes are the younger brother to the Sand Dune, only having been a part of Phil's lineup for several years. They take 3-4 years to reach maturity. The meats are super plump and have a clam-like chew - think caramelized onions, nori, and spring garlic.
Story: Phil started this oyster farm in 2016 as an irresistible side hustle. Growing up on PEI, he fell in love with ocean and boating and couldn’t let the opportunity to grow oysters pass him by. His main source of business is exporting onions and potatoes he grows on PEI. Amongst us ICO oyster people, we call these the ‘Potato Truck’ oyster for obvious reasons.
