Plump opaque meats fill each shell. Low to medium salt with a savory verdant green bite. Saltwinds are a true expression of the location where they’re raised, at the confluence of the Scarborough River and Marsh. The farm is awash with high water flow and tons of nutrients that ride in on every incoming tide, flooding their lease with lots of oyster food and a blend of both salty and fresh water.

About Saltwind Oysters

Harvest location: Pine Point, Scarborough, ME

How they’re grown: Saltwinds take 2.5 years to reach harvest size and are grown in floating OysterGro cages. The farm is located in the Scarborough River at the mouth of the Scarborough Marsh which clocks in at 3,000 acres, making it the largest salt marsh in the state!

Why they’re unique: 
After 6 years as a commercial clam harvester, Matt started his oyster farm as a way to continue a career on the water while alleviating reliance on wild stocks/in a more responsible way that did not rely on wild harvesting. We love a sustainable king!

Story: 
Matt Hassler is a Mainer through and through, and grew up a mile and a half from where his farm is located today. Matt spent the better part of his younger years on a fishing boat exploring the rivers of Pine Point. Although time passed and both his boat and scope of exploration has expanded, he still begins and ends his day at home in Pine Point. He founded Saltwind in 2019 and has immense gratitude for being able to grow oysters in a place that has been so special to him since the very beginning.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠

"We like trying all the different types of oysters and comparing taste. These were smaller, yet packed with flavor. Not very salty, but delicious. My husband thought they had a cucumber flavor.
