RAMONA PENA COCKLES IN BRINE 25/30 are simply a great product, cooked to perfection, and preserved to sustain their fresh briny sweetness. We are blown away by how sweet these are - each one of these little guys has an incredible mouth feel, firm texture but tender, with a burst of brine followed by an oh-so-good clammy sweetness. We toss them in olive oil, lemon zest, fresno chili and parsley (no need to season, plenty of brine going on). They sit in a bowl while we toast a crunchy piece of bread, rub a garlic clove on it, and pile it high with the cockle mixture. They are a delight!
At our Raw Bars in Duxbury, MA and Portland, ME we go through epic numbers of tinned fish. We aren't sure who eats more, our guests or our employees (cue late night negroni and tinned fish session).
