There is no seafood more sweet, or succulent than the Nantucket Bay Scallop. Notoriously difficult to obtain and often imitated (a cape scallop ain't a Nantucket scallop, babe) we went in on a boat load and froze it on the spot. That means we feel very confident about the taste, texture, flavor and availability. A ten out of ten on each of those, btw. Paired with oysters and a caviar, and you've got your evening plans set. Here's the scene: You shuck a dozen, place caviar on half of the oysters and leave the rest in the tin on ice. Flash sauté the bay scallops (two minutes max) and plate them. Grab toothpicks, a bottle of bubbly (or make a vespertine, thank you and please) and you have the makings of a pretty special evening. It works as well alone as for a couple, and takes the hallmark right outta of the holiday.

Please note: Bay Scallops ship frozen and vacuum sealed. It is normal for the meat to be partially or completely thawed but cold on arrival. Refrigerate when received. Do not re-freeze.
