As sea scallops are motile and thrive in the wild across New England, they are harvested in ever-changing areas. Fishing permits can change year ‘round, impacting where dayboats land their catch.  The scallops are wild harvested via dredge across Cape Cod by independent fishermen.

Scallops ship frozen and vacuum sealed. It is normal for the meat to be partially or completely thawed but cold on arrival. Refrigerate when received. For optimal quality, use within 3 days of arrival.

Very high quality scallops

"Remarkable quality scallops, honestly better than what I had been buying fresh from Hokkaido. I used 1 lb to serve 4 people a scallop crudo with fresh yuzu and sudachi juice, yuzu and buddha's hand zest, a high quality light Italian olive oil and flaky salt. The second pound I used in fried rice. I seared quickly, then deglazed with the scallop juice (absolute umami bomb, do not discard this), light soy, and a tiny bit of mirin then reduced that a bit and added to fried rice at the end in a riping wok. Can't wait to buy more, I think I ate about 10% of the scallops raw during prep."
