Beautiful! Stunning, clean, teardrop shaped shells that are real easy to shuck. Super toothy adductor that lends a pronounced sweetness that reminds us of the ripe melon-y qualities of a West Coast Gigas, paired with the briny salinity of a Damariscotta oyster. Do like the farmers do and try them with Ghost Pepper hot sauce and saltine crackers!

How they’re grown: Thomas’s farm is nestled in between Cousins Island to the east and the mainland of Yarmouth to the west, and backs up to Broad Cove which creates an excellent flow of fresh water and nutrients (two things you hope for when growing healthy oysters). The crew uses a FLUPSY system (essentially floating cages) throughout their oysters’ entire growing cycle which harnesses the rocking of waves and the flow of the tide to help tumble the oysters as they grow - creating strong, deep shells and a consistent crop. Get a bag for yourself and you’ll see what we mean! It takes two - to - two and a half years to reach harvest size.

Why they’re unique: 
Thomas’s crew is meticulous and regularly tumble and monitor their gear which is the secret sauce behind their crops’ super consistent shapes and squeaky clean shells.

Story: 
Thomas first discovered oyster farming as a teenager in Maine before he eventually founded a farm of his own in 2018. A few years later, he helped open the Freeport Oyster Bar right next to the L.L. Bean (so Maine!) which works with other small, local farms, and aims to “get beautiful oysters in front of more people”. We can’t think of a better way for an oyster farmer to talk about oysters all day, every day, than to open a watering hole centered around that subject!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠
