What’s more New England than Johnny Apple Seed, cod, or the Boston Red Sox? You guessed it, sea scallops (pronounced scall-ups). These firm and sweet nuggets can be found on menus and in seafood cases around the country, but not many people have access to true dry-pack, let alone live sea scallops. This is where we come in.
The Maine Aquaculture Co-operative has been harvesting wild sea scallop spat (babies) and raising them in lantern nets surrounding by the cold nutrient rich waters of the Gulf of Maine. After about 3 years in that environment, you have a market-ready live in-shell “baby” sea scallop. The shells are about 3" in diameter and the scallop meat is just around the full-grown size of its cousin the bay scallop.
The sea scallop has a firmer meat and, like all Maine shellfish, it has a uniquely clean brine with a delicate sweetness that is truly addictive. Do not be intimidated by these creatures. Shucking is super simple and they are perfect raw or barely kissed by the fire of the grill.
