LES MOUETTES D'ARVOR RILLETTES OF HAKE WITH CIDER are flaky white fish slow poached and shredded then added to pureed allium and fresh cream. Slow cooked a second time to bring all of the flavors together. Sweet and buttery, perfect at room temp. Spread on a seedy cracker or pumpernickel toast. Add capers and lemon if you want to get wild.
At our Raw Bars in Duxbury, MA and Portland, ME we go through epic numbers of tinned fish. We aren't sure who eats more, our guests or our employees (cue late night negroni and tinned fish session).
