Now, we're a little biased, but we think the best oysters in the world are grown right here in New England (to be specific, here in Duxbury and a few miles south on Cape Cod...but mostly here in Duxbury). We'd like the opportunity to prove that to you, so we've assembled a dozen each of some of the best bivalves we know of, grown by some of the best farmers we know of.
The Gilt City Holiday Special contains three (3) dozen oysters:
Island Creeks hailing from Duxbury, MA With a highly segmented flavor profile, these are the quintessential East Coast oysters. Strong salinity up front gives way to vegetal, mossy, buttery flavors of eel grass and seaweed which crescendo into a robust, sweet finish. It doesn't get any better than this.
Ichabod Flats from Plymouth, MA They tend significantly toward the meaty, savory end of the spectrum especially in comparison to the Island Creeks. They have a nice buttery taste while still taking advantage of the crisp texture (and thick shells) that the cold waters of CCB (Cape Cod Bay) lends its shellfish.
Wellfleets from Wellfleet, MA - The water in Wellfleet is slightly warmer and less salty than Duxbury. These oysters, while still salty, are a bit more mild than some of our other oysters. They have both strong umami and vegetal qualities with a well-defined adductor muscle and a nice texture. They live up to their reputation.
