About Crowes Pasture Oysters

Harvest location: Quivet Neck Beach, Dennis, MA

How they’re grown: The farm crew doesn't need a boat to access their grant, they can ride out to their meticulously arranged trays in a truck! Since trucks don't float [yet...] , these oysters can only be farmed at low tide, which gives the crew a tight window to harvest as many as they can. The grow-out process takes about three years, and everything is grown off-bottom in elevated trays and tumbled regularly. In the winter, they're removed from the farm and kept in a storage shed, safe from storms and freezing temperatures, until they're placed back in the water in the spring.

Why they’re unique: 
In a town of over 30 oyster farms, this venture is on the smaller side, even by boutique standards—clocking in at a single acre bordering their namesake Crowes Pasture Conservation Area. The combination of fresh water from Quivet Neck Creek and saltwater from Cape Cod Bay create ideal conditions for growing oysters.

Story: 
Gary has spent more than 40 years out on the water doing both recreational and some commercial shell fishing, it even helped him to pay for college once upon a time. He waited more than 8 years for his own shellfish grant and retired from his job teaching high school science to get out on the water full time. He has had his eyes on expansion ever since!

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Fantastic Flavor & Easy Shucking

"These oysters were an amazing addition to our NYE dinner party menu and paired wonderfully with mignonette or enjoyed by itself. Many of the reviews were spot on: strong briny flavor with a smooth finish, plenty of oyster liquor, and meats that filled up the entire shell regardless of variations in size. As mentioned by others, these were easy to shuck. We have ordered from Island Creek Oysters for a couple of years but never from this farm before. Definitely will again next time they’re offered seasonally - every oyster was absolutely perfect!"

We've been a very satisfied

"We've been a very satisfied customer for several years. These were exceptional!!! They were plump and juicy, sweet with a little brine. With just two of us, we ate them raw several times, but with about 1 1/2 dozen left, fried them for Po-Boys. I usually hate to fry your oysters, because they are such a treat raw, but this is where Crowes Pasture Oysters shined. I do the cooking, not the shucking. I was amazed at the oysters I had to cook with!!! We had sandwiches with beautifully fried individual oysters. . . . . not the pieces/parts that sometimes happens. And they remained plump and juicy. Definitely will BOLO for these."
