This specific geography plays a major role in their appearance because the crew is able to manipulate the rate of growth and quality of the shell by moving them between the calm waters protected by the islands or the farther out in the choppier, cooler water which is more exposed to the bay. With the FlipFarm system, Buttercup oysters sit in baskets on the water's surface, keeping them adrift in tides that can swing up to 13 feet.
