Farming Technique: Oysters in Wellfleet are grown in the rack and bag system. Barbara Austin and most of the other farms are able to drive their trucks right out on the flats to their bags.
Unique Factor: There are so many growers in Wellfleet and high variability in quality. Island Creek Oysters is lucky to work with some of the best!
Salinity: We'd give these a 7 out of 10 (a bit saltier than the Island Creeks)
Flavor Notes: High salt, briny splash of crisp mineral water.
