Wellfleets are well renowned for their intensely briny taste (think big blast of ocean water) and clean finish. They also have a defined vegetal undertone from the bottom planting. Well-defined adductor muscles and plump, juicy meats make for a tender, chewy bite.

About Wellfleet Oysters

Harvest location: Wellfleet, MA - CCB11/CCB14

How they’re grown: Some Wellfleet seed comes from our very own hatchery! The seed is either placed in bags on racks on the ocean floor or bottom planted for grow-out, depending on the grower. The leases are super close to the mouth of the Blackfish Creek Estuary, a brackish salt pond that provides tons of food (delicious algae and plankton) for the oysters to eat. Big, quick tides move swiftly through the beds twice a day giving the oysters their distinctive high salinity and crisp minerality. During the winter, all gear is removed from the water to prevent storms and ice from destroying the oysters.

Why they’re unique: 
Wellfleet is a famed oyster town! There are over 100 small growers in Wellfleet, many of whom work alongside their family members, keeping the old-fashioned farming traditions alive. We select oysters from seven top-notch growers in the Wellfleet shellfish community to provide the classic New England oyster experience.

Story: 
The most distinguishing aspect of the Wellfleet growers is how passionate they are about their livelihood. It is a small town with a very large cast of characters. Each grower bringing their own unique, original, and competitive personalities to provide the best product they can. Grab some popcorn and head down to Wellfleet Harbor around low tide; you will see what we mean. Most of there farmers have been doing this for a long time, and many of them work alongside their family members. They embody the old-fashioned farming tradition that reflects history in every bite.

Oyster FAQ

How long do my oysters keep?

Your oysters keep in the refrigerator for 5-7 days!  You can order a day or two early to make sure you have them in time for your gathering.  They are totally fine hangin’ out in the cool air.  

How do I store these bad boys?

When you receive your package, pull them out of the box (these guys need a little fresh air!). Grab a mixing bowl and throw the mesh bag in the bowl so that the oysters don’t leak all over your refrigerator. Grab a damp cloth and throw the cloth over the bowl.  You are good to go for the next 5-7 days. Doesn’t hurt to dampen the cloth each day to keep them moist and chilled.

Should I keep them on ice?

Only put the oysters on ice before service.  The oysters will actually die in the melted fresh water so do not store the oysters on ice.  They will not like this.

How are they shipped?

We ship using FedEx Overnight service. You will receive tracking info after the label has been printed the day before your oysters are set to arrive.  We do not require a signature – Fedex will leave your package at your doorstep.

Is your packaging recyclable?

Short answer: YES!

Our ClimaCell thermal liners are made of 90% FSC certified virgin kraft paper and corn starch, which allows you to recycle the insulated liner at home along with the cardboard box.⁠
