Now, we're a little biased, but we think the best oysters in the world are grown right here in New England (to be specific, here in Duxbury and a few miles south on Cape Cod...but mostly here in Duxbury).  We'd like the opportunity to prove that to you, so we've assembled a dozen each of some of the best bivalves we know of, grown by some of the best farmers we know of.

The Damn Yankee (Sampler) contains three (3) dozen oysters:

Island Creeks hailing from Duxbury, MA With a highly segmented flavor profile, these are the quintessential East Coast oysters.  Strong salinity up front gives way to vegetal, mossy, buttery flavors of eel grass and seaweed which crescendo into a robust, sweet finish. It doesn't get any better than this.

Wellfleets from Wellfleet, MA  Wellfleets are well known for their high salinity and their clean, simple finish. They are a bit milder than some of our other oysters except for the full blast of salt. They also have a strong vegetal undertone with a well-defined adductor muscle. Depending on the season, welfleets can have a trace of minerality towards the end.

Malabar Oysters from Barnstable, MA  Malabar Oysters are grown in Barnstable in a soft-sanded, strong swelling bay. They are grown from seed to adult size in trays and never make contact with the bottom. Clean, smooth shells with deep cups provide the perfect serving tray for their briny flavor and underlying notes of kelp and miso broth.
