The Damn Yankee (3 doz Sampler)
Now, we're a little biased, but we think the best oysters in the world are grown right here in New England (to be specific, here in Duxbury and a few miles south on Cape Cod...but mostly here in Duxbury). We'd like the opportunity to prove that to you, so we've assembled a dozen each of some of the best bivalves we know of, grown by some of the best farmers we know of.
The Damn Yankee (Sampler) contains three (3) dozen oysters:
Island Creeks hailing from Duxbury, MA With a highly segmented flavor profile, these are the quintessential East Coast oysters. Strong salinity up front gives way to vegetal, mossy, buttery flavors of eel grass and seaweed which crescendo into a robust, sweet finish. It doesn't get any better than this.
Wellfleets from Wellfleet, MA Wellfleets are well known for their high salinity and their clean, simple finish. They are a bit milder than some of our other oysters except for the full blast of salt. They also have a strong vegetal undertone with a well-defined adductor muscle. Depending on the season, Wellfleets can have a trace of minerality towards the end.
Peter's Points from Onset, MA - Peter's are known for their deep cup and green(ish) shell. Meaty and full throughout, they have a firm texture and good bite from beginning to end. Unlike most of the oysters we carry, these are not cushioned by savory or sweet flavors. After the brine, comes a strong, grassy, vegetal flavor that isn’t shy. A full on Cape oyster experience!
