Farmer Jon Martin has been harvesting oysters in the mouth of Barnstable Harbor for the past three years. A native Cape Codder and full-time firefighter with the Hyannis fire department, Martin has always wanted to make a living by the sea. He started out helping a neighboring oyster farmer until he was able to secure his own lease a few years back. His lease sits on about two acres south of Sandy Neck Beach, which acts as a barrier to the sandy bottom flats where his oysters are grown.
The large, 10-foot tides mix with a fresh water influx from Scorton Creek so Jon’s lease, even at a mile away from land, still gets drainer tides. Because of the sandy bottom, he plants the oysters in trays, giving them plenty of space to grow rounded shells, and hand harvests directly from the trays.
A perennial fan favorite, these gems are clean and oceany with a sweet melon finish.
